Cabbage Enchiladas (dairy free)

Instructions
Step 1
Cook rice according to package instructions.
Step 2
Boil cabbage leaves to soften and lay on a towel to dry.
Step 3
Preheat oven to 350 degrees fahrenheit. Spread a thin layer of enchilada sauce on bottom of a 9x13 baking dish.
Step 4
Combine corn, black beans (drained and rinsed), chicken (drained), rice and salsa in a bowl. Add salsa last to make sure mixture isn't too runny (may not need a full cup of salsa). Or add extra rice to soak up excess juice.
Step 5
Roll enchiladas and place seam side down in pan.
Step 6
Pour the rest of the can of enchilada sauce overtop of enchiladas. Bake uncovered 18-23 minutes.
