Chicken
2 Tbspoil
1.5 lbboneless skinless chicken breasts
diced into 1-inch cubes
1 tspchili powder
1 tspcumin
1 tspsea salt
½ tspblack pepper
Mexican Rice
1 Tbspoil
1onion
medium, diced
1red bell pepper
diced
2garlic cloves
minced
1 ⅔ cchicken broth
1 x 15 ozcan fire-roasted tomatoes
1 x 15 ozcan black beans
drained and rinsed
½ tspchili powder
½ tspcumin
1 tspsea salt
1 tspgarlic powder
½ tspblack pepper
2 cupslong grain rice
parboiled
1 ½ Tbspfresh lime juice
½ cupfresh cilantro
chopped
Instructions
Prepare the Chicken
Step 1
Heat 2 Tbsp olive oil in a large nonstick skillet over medium-high heat. Add the diced chicken, chili powder, cumin, salt, and pepper.
Sauté until fully cooked, about 7 minutes.
Transfer to a plate and set aside.
Prepare Mexican Rice
Step 2
In the same skillet, add 1 Tbsp olive oil, diced onion, red bell pepper, and minced garlic.
Sauté for 5 minutes until softened. Add chicken broth, fire-roasted tomatoes, black beans, chili powder, cumin, salt, garlic powder, and pepper. Stir well and bring to a boil. Stir in the rice. Reduce heat to medium, cover, and simmer for 15 minutes. Remove from heat and let rest, covered, for 5 minutes. Fluff with a fork, then stir in the cooked chicken, lime juice, and fresh cilantro.
