Instructions

Prepare the Chicken

Step 1
Heat 2 Tbsp olive oil in a large nonstick skillet over medium-high heat. Add the diced chicken, chili powder, cumin, salt, and pepper. Sauté until fully cooked, about 7 minutes. Transfer to a plate and set aside.

Prepare Mexican Rice

Step 2
In the same skillet, add 1 Tbsp olive oil, diced onion, red bell pepper, and minced garlic. Sauté for 5 minutes until softened. Add chicken broth, fire-roasted tomatoes, black beans, chili powder, cumin, salt, garlic powder, and pepper. Stir well and bring to a boil. Stir in the rice. Reduce heat to medium, cover, and simmer for 15 minutes. Remove from heat and let rest, covered, for 5 minutes. Fluff with a fork, then stir in the cooked chicken, lime juice, and fresh cilantro.
