Thai Red Curry with Turkey Meatballs

Ingredients
6 servings
Meatballs

1 lbground turkey

1egg

1 cuppanko

½ cupgreen onion
minced

3 glovesgarlic
pressed

1 ½ tspGinger paste

¾ Tbspfish sauce

1 Tbspcurry paste

1 tspblack pepper

Instructions
Step 1
1. Preheat oven to 400 degrees. Make meatballs by combining all meatball ingredients and refrigerating it for 15 minutes. Shape and bake for 20 minutes. Broil for 5 minutes on low for a nice crust

2. While meat meatballs are baking, make the curry! Sauté onions, garlic and bell peppers for about 5 minutes.

3. Add in ginger paste, curry paste and Thai chilis and sauté for another 5 minutes

Step 4
4. Pour in coconut milk and add in fish sauce to taste and brown sugar and stir together.


Step 5
5. Simmer for another 5 minutes. Once meatballs are finished, add them into the curry sauce, add cilantro and serve over rice!
