VEGAN TANTANMEN 🍜 a Japanese inspired creamy ramen bowl 🤩
*for 2 servings*
👇🏾INGREDIENTS👇🏾
-4 tbsp tahini
-1 tbsp sesame oil
-2 tbsp soy sauce
-2 tsp rice vinegar
-1 cup oat milk
-1 cup veg stock
-1/2 block firm tofu
-1 tbsp garlic paste
-2 tbsp soy sauce
-1 tsp Szechuan pepper or chilli flakes
-1 tbsp peanut oil (or veg oil)
-ramen noodles
-sweetcorn
-crushed peanuts
-spring onion
-beansprouts
-chilli oil
👇🏾RECIPE👇🏾
-mix the tahini, sesame oil, soy sauce + rice vinegar into a paste before adding the oat milk + vegetable stock and mixing into a broth.
-to make the tofu crumble, break up the tofu into a crumb then add the soy sauce, garlic paste, Szechuan pepper + oil then air fry/bake/fry till browned (I air fried for 8 minutes).
-serve the broth with cooked noodles, sweetcorn, cooked beansprouts, tofu crumble, crushed roasted peanuts (roast in oven for 10 minutes @ 200°), spring onions + chilli oil
