Instructions
Step 1
Peel and mince ginger. Trim and finely chop scallions. Have lime; cut one half in to wedges.
Step 2
Melt 2 Tbsp butter in a small pot over medium-high heat. Add 1 tbsp minced garlic. Cook 30-60 seconds. Add to rice cooker with pinch of salt, rice, and water.
Step 3
Combine scallions, sesame oil, sesame seeds, 2 Tbsp olive oil, 2 Tbsp soy sauce, 2 tsp ginger, 2 tsp sugar, and juice from 1 lime. Season with salt and pepper.
Step 4
Pat tilapia dry; season generously with salt and pepper. Heat large drizzle of oil in large pan over medium-high heat. Add tilapia and cook until browned and cooked through, 4-6 minutes per side.
Step 5
Fluff rice with fork. Divide rice and tilapia, cover with scallion pesto. Serve with remaining lime wedges.
