Creamy Sundried tomato and lemon burrata pasta

Instructions
Step 1
Boil pasta and save 1 cup pasta water.
Step 2
Add oil to a large pan on medium to high heat.
Step 3
Add the shallots and cook until translucent about 3 minutes.
Step 4
Add seasoning, lemon zest and juice cook for 5 minutes.
Step 5
Add sundried tomato paste.
Step 6
Add cream, when it starts to bubble add mixed greens and Parmesan and salt, pepper to taste.
Step 7
Add pasta to sauce mixture and combine with 1/2 cup reserved pasta water.
Step 8
Top with 1 ball burrata and parsley
