2 x 300gskinless salmon
12strawberries
large, thinly sliced
80gcashew nuts
chopped
80galmonds chopped
170gmixed salad leaves
Choice of chopped herbs

Instructions
Step 1
Heat a dry, non-stick frying pan to a high heat and add the salmon fillets. Cook for 2-3 minutes on each side, then turn the heat down to medium and cook for a further 2-3 minutes. The salmon should release enough oil to cook the fish perfectly. Take off the heat and set aside.
Step 2
Whisk together the dressing ingredients and set aside.
Step 3
Combine the strawberries with the nuts and salad leaves in a large mixing bowl.
Step 4
Arrange the salad on a plate and top with the salmon. Dress with the vinaigrette and a scattering of fresh herbs.
