Ingredients

400gpasta
400gpeeled tomatoes tin
small

1eggplant

ricotta salata

fresh basil

2garlic cloves

extra virgin olive oil

vegetable oil

salt

pepper
Instructions
Step 1
Cut the eggplant(s) into small strips and fry them in the vegetable oil until they start to brown. Place them on kitchen paper so it absorbs the oil.
Step 2
Heat the extra virgin oil, add the garlic and sauté for a couple of minutes.
Step 3
In the meantime, add the peeled tomatoes to a bowl, sprinkle salt on top and then break them down using a potato masher.
Step 4
Add the dried oregano, pepper, and fresh basil leaves. Mix it together and add it to the pan (low heat).
Step 5
Add the eggplant strips and leave to simmer for around 40 minutes.
Step 6
Once it is almost ready, grate a handful of ricotta salata into the sauce and let it melt.
Step 7
Cook the pasta according to the packet instructions, add it to the rest (with some pasta water) and you're done!
