Instructions
Step 1
Put the pepper (capsicum), onion, garlic and
coriander in a blender or food processor
and process until finely chopped. Heat 1
tablespoon oil in a small saucepan. Stir in
the onion mixture and cook, stirring, for 3
minutes. Heat remaining oil in a heavy frying
pan. Add rice. Stir over a medium heat for
about 3-4 minutes until light brown.
Add the onion mixture, stock, salt and pep-
per. Bring to the boil, cover, then simmer for
10 minutes until liquid is absorbed. Reduce
heat to very low and steam, still covered, for
30-40 minutes until rice is tender. Add more
stock if necessary to keep rice moist. Adjust
seasoning. Transfer to a warmed serving dish.
