Instructions

For the Wings

Step 1
Separate the flats from the drumettes and the tips. Save the tips for stock maybe?
Step 2
Pat the chicken dry with a flour sack towel or paper towels. the more moisture you wick away here the crispier the wing will be.
Step 3
Toss the wings in the corn starch until each wing is coated.
Step 4
place the wings on a parchment paper covered backing sheet or into a fryer and cook until internal temperature reaches 165 degrees F and they are crispy on the outside. If baking, I suggest flipping the wings at least twice to achieve a better crisp.

For the Sauce

Step 5
Melt the butter in a sauce pot and add the garlic.
Step 6
Add the hot sauce of your choice and bring to a simmer.
Step 7
Let reduce slightly and remove from heat.

Tie it all Together

Step 8
Toss the wings in the sauce immediately before serving.
