Step 1
Preheat the oven to 375˚F
Step 2
Chop the roma tomatoes into small 1/4″ pieces. Chop basil and garlic. In a large bowl, toss the tomatoes, basil, and garlic with the vinegar and half of the salt and pepper. I like to chop everything really small in this dish so that it makes it really easy to eat and allows the flavors to really combine and sink into the chicken.
Step 3
Lay the chicken breasts flat in the bottom of a large baking dish and season with the remaining salt and pepper. Pour the tomato mixture over the top of the chicken and then use a spatula to spread it evenly over the chicken.
Step 4
Top with the mozzarella cheese.
Step 5
Bake on the middle oven rack for 35-45 minutes or until the chicken reaches an internal temperature of 165˚F. Depending on how thick your chicken is, how big your dish is, your climate, and how your oven cooks, the cook time could vary a bit from the low end to the high. Check frequently until it is done! If the cheese starts to get more brown than you like, you can loosely cover with foil.
Step 6
Top with fresh chopped basil and balsamic glaze to garnish. Serve hot and Enjoy!
