Instructions

Step 1
Thinly slice all vegetables. Layer half on bottom of CrockPot followed by 4 chicken breasts. Season chicken with one packet of fajita seasoning. Repeat for a second layer. Cook on high for 6-7 hours (8 hours or so if using frozen chicken breasts). Chicken will be fork tender and fall apart. Remove chicken and peppers from juices, shred and return to pot. (I usually remove about 75% of the juices.) I always add garlic salt, Johnny's Dock and black pepper to proteins as well. Add cayenne if you like things spicier.
