Savoury Bread Pudding

You can add all sorts to this or leave out the bacon for a veggie version. The bacon adds a lot flavour, though, so depending on what veg you use, you might need more parmesan. Some ideas: spinach, feta, cherry tomatoes, sundried tomatoes, leeks, sausage, chorizo, sweetcorn.....

Instructions

Step 1
Butter bread on one side & line a casserole dish with about 3 slices of bread cut to fit, butter side down.
Step 2
Chop bacon & veg and fry till soft.
Step 3
Spread veg over the bread & sprinkle with half the parmesan
Step 4
Lay remaining bread over bacon mixture.
Step 5
Mix Milk, eggs, salt & pepper and pour over casserole. Sprinkle with remaining parmesan. If the bread is floating to the top, use a plate or similar to weight it so it is fully in the egg mixture.
Step 6
Leave to stand till egg mixture has soaked into bread - at least 1/2 hr.
Step 7
While the pudding is standing, preheat the oven to 160
Step 8
Sprinkle grated cheddar and nutmeg over the top then bake for about 30 mins till set and golden brown
Step 9
If you're in a hurry you can microwave until set, then brown under the grill.
