Instructions
Step 1
Preheat oven to 350°F. Soften tortillas, either by warming both sides on a griddle or by stacking Ina large casserole dish, cover, and heat in a 350° oven for 10 minutes.
Step 2
Saute onions 5 minutes with oil or onion-pepper blend 2 minutes without oil. Add refritos and salsa, heat thoroughly.
Step 3
Lay out tortillas on a baking sheet. Divide bean mix between tortillas; top with cheese. Fold up in an envelope fold for burritos or roll up as for Enchiladas. Bake ~10 minutes. Garnish if desired.
