Instructions
Step 1
Preheat oven to 180 degrees Celsius.
Step 2
In a large bowl, combine 120 gms of spinach, mushrooms, ricotta, egg, italian herbs and garlic to make the filling.
Step 3
Gently fill cannelloni tubes with the ricotta mixture. You can use a piping bag or sandwich bag with the corner cut off to pipe the filling inside. Set aside.
Step 4
In an oven proof dish, layer half the passata on the bottom and place cannelloni on top. Pour the remaining passata on top and bake in the oven for 25-30 minutes.
Step 5
Meanwhile, combine the remaining spinach, basil, tomatoes and lemon juice to make the side salad.
Step 6
Serve 2 cannelloni alongside half the salad. Store the leftovers in the fridge
