Step 1
Prepare ribs be first removing the connective tissue on the interior side of the rib cage.
Step 2
Flip ribs back over and season with brown sugar first by rubbing it into the meat.
Step 3
Do the same for the pepper, but sprinkle the salt over the top.
Step 4
Apply liquid smoke over ribs and rub in to make sure it gets infused with the meat.
Step 5
Pre-heat oven to 275 F, while preparing sheet trays with aluminum foil.

Step 6
Place ribs on the trays and put into the oven.
Step 7
For 1 rack, cook for 1.5 to 1.75 hours; for 2 racks, cook for 2.25 hours. Remove ribs from the oven and coat the ribs with desired BBQ sauce. Put in the oven for another 15 minutes.
Step 8
Pull from the oven and allow the slab to cool.
