Step 1
Tip the lentil into a bowl, cover with cold water and leave to soak for 15 mins.
Heat a large saute pan, add half the oil and 3 of the chicken thighs, fry on each side for 1 -2 mins until brown, remove to a plate then repeat with the last 3, remove and set aside for later.
Add onions to the pan, the stir, cover and cook on a medium heat until , then cook for another softened.
Add garlic, ginger and spices and stir well then cook for a nother 2 mins. While spices cook through, drain lentils.
Return chicken to pan, add tomatoes, 500 ml of water, the crumbled stock cube and drained lentil, then mix well and bring to the boil.
Stir in the honey, season with salt and pepper, then cover, reduce the heat and simmer for 20-25 mins, until the chicken is tender, the lentil are cooked through, and the sauce has thickened.
Stir through the chopped coriander and serve with rice.
