Instructions
Step 1
Cook your spaghetti in a large pan of salted boiling water according to the packet instructions. When the pasta is ready, drain it in a colander, reserve.
Step 2
Heat the olive oil in a large frying pan and shallow. Fry the garlic, pine nuts and chilli for about 20 seconds, then add the prawns and cook for about 2 minutes.
Step 3
Add the white wine, fresh herbs, tomato purée, cherry tomatoes, and simmer for a couple of minutes over a high heat.
Step 4
Meanwhile, grate the zest of the lemon and roughly chop the rocket.
Step 5
Toss the spaghetti with the sauce, squeeze in the lemon juice and zest, add half the chopped rocket, adding the butter, and correct the seasoning with sea salt and black pepper. Allow the rocket to soften slightly and the pasta to absorb the flavour.
Step 6
Divide between plates and sprinkle with the rest of the rocket leaves.
