Ingredients
4 servings
4Chicken Sausages
cajun style andouille
5 ozchicken breast
raw
1 cupyellow onion
chopped
1 cupred bell peppers
chopped
2ribs celery
sliced
1 clovegarlic
1 tsp minced
½ tspcajun seasoning
1bay leaf
1 cuprice
uncooked, converted brown or white
1 cupchicken stock
½ cupcanned tomatoes
diced fire roasted
green onions
sliced, for garnish
Instructions
Step 1
Slice the sausage into rounds and cube the chicken breasts.
Step 2
Spray a skillet with cooking spray. Heat to medium/high heat and add the chicken and sausage. Cook until browned on all sides about 8-10 minutes. Remove from pan.
Step 3
Add the chopped onion, bell pepper, celery, garlic, bay leaf and cajun seasoning to the skillet. Cook over medium/high heat until the vegetables are tender, about 5-7 minutes.
Step 4
Stir in the uncooked converted rice and cook for about 3 minutes. Stir in the chicken broth, tomatoes, chicken, and sausage. Bring to a boil over high heat. Cover and reduce to low/medium heat. Let simmer for about 20 minutes, stirring occasionally, or until rice is tender.
Step 5
Divide into four equal portions and garnish with sliced green onions.
