Instructions
Step 1
Dice up sausage and add to a skillet. Cook until done
Step 2
Chop up onion and bell pepper. Add to the pan and cook for 4-5 minutes
Step 3
Next, add the seasonings and stir until coated.
Step 4
Add rice, chicken broth, and rotel tomatoes (do not drain). Mix well.
Step 5
Cover and simmer on low for 20 minutes
Step 6
Garnish with shredded cheese and parsley
