Ingredients

300gchicken breast

1red bell pepper
deseeded and diced

1green bell pepper
deseeded and diced

1onion
peeled and finely diced

2celery sticks
sliced

2garlic cloves
peeled and minced or finely chopped

2 TbspCajun seasoning

1 tspsmoked paprika

½ tspdried oregano

200glong grain rice

1 x 400gtin chopped tomatoes

400mlchicken stock
made from 2 chicken stock cubes

1 Tbspgluten free Worcestershire sauce
5Heck chicken sausages

Instructions
Step 1
Spray a large shallow casserole dish with cooking spray, add the chicken and cook over a medium-high heat for 2-3 minutes. Add the peppers, onion and celery and cook for another minute.
Step 2
Add the garlic, Cajun spice, paprika and oregano, and cook for a further minute to release the flavours.
Step 3
Add the rice, chopped tomatoes, stock and Worcestershire sauce. Stir in the sausages and bring to a boil. Reduce the heat to low and cook for 25 minutes, or until all the liquid has been absorbed and the rice is tender.
Step 4
How to batch: Cool within 1 hour of cooking, then divide into individual portions and freeze immediately.
