Cardamom pancakes with mango and passion fruit

Instructions

Step 1
Mix the flour with the salt and cardamom. Add half of the milk and whisk together to a batter without any clumps. Whisk the rest of the milk with the batter and then the eggs, one by one. Fry the pancakes in a buttered pan.

Topping

Step 2
Cut the passion fruits in half and scrape the insides into a pot. Peel and shred the ginger. Wash the lime and shred the skin and press out the juice. Put the ginger, lime juice and lime peel, sugar and water into the pot with the passion fruit. Let cook on low heat for 15 minutes.
Step 3
Peel and cut the mango into small pieces. Serve the pancakes with the mangoes, passion fruit syrup and caster sugar.
