Ingredients

1red pepper
deseeded and diced
1yellow pepper
deseeded and diced
1red onion
diced
low calorie cooking spray
sea salt
freshly ground black pepper
4salmon fillets
skin on
For the spice mixture
Instructions
Step 1
Mix all of the spice ingredients together and set aside.
Step 2
Preheat the oven to 200°C (fan 180°C/gas mark 6).

Step 3
Place the peppers and onion on a baking tray. Spray with some low cal cooking spray and season with salt and pepper.
Step 4
Coat the top of each salmon fillets with the spice mix and Place the fillets on top of the veg on the baking tray (you can keep any remaining spice mix in an air tight container for another time).
Step 5
Cut the lemon in half length ways and cut one half into eight slices. Arrange two slices on each piece of salmon and season with a little salt. Squeeze the remaining lemon half over the fish.
Step 6
Place in the oven and cook for 20 minutes, or until the fish is cooked through.
Step 7
Remove from the oven and serve the spiced dish fillets with the roasted vegetables.
