Instructions

Step 1
1. Mash up bananas and sweet potato in bowl with a fork.
Step 2
2. Add eggs, baking soda, cinnamon, gelatin, and sugar.
Step 3
3. Mix well until batter is a smooth consistency.
Step 4
4. Using medium heat, warm skillet.
Step 5
5. Melt coconut oil in pan. (You may use a non-stick pan. Just make sure it is not chipped.)
Step 6
6. In heaping 1 T. servings make small pancakes.
Step 7
7. While cakes are in pan, add 2 raisins per pancake.
Step 8
8. Flip pancakes when they begin to bubble on top.
Step 9
9. Add desired topping before serving.
Step 10
This recipe should make between 10 and 12 small pancakes.
