Instructions
Step 1
Put the onion and vinegar in a bowl and leave to sit for 15 mins.
Step 2
Add the garlic, chillies(if using) and coriander then season to taste.
Step 3
Chop the avacados and place in the bowl.
Step 4
Roughly mash the mixture with a fork, mixing as you go.
Step 5
Add lime juice and more salt to taste.
Step 6
Stir through the oil until it is the correct consistency.
