Step 1
Sauté the finely chopped onion, celery and carrot
Step 2
Blitz the mushrooms in a food processor using the largest grated blade. Add the mushrooms until cooked. Add the chopped garlic.
Step 3
Add the chopped tomatoes, herbs and spices, tomato purée, vinegar
Step 4
Reduce until sauce thickened. Place over cooked pasta and add 15g of cheese.
