Preparation
Step 1
Finely chop the tomatoes, onions, garlic and cucumbers and put them aside.
Step 2
Place the chopped onions and garlic over the stovetop in a saucepan and lightly cook the vegetables in olive oil.
Step 3
Add fresh basil leaves and wait for 30 seconds before adding the tomatoes and cucumbers in the saucepan.
Step 4
Close the heat and stir everything together with some chili flakes and oregano (feel free to add any other herb seasonings too).
Step 5
Lay out a tortilla on a plate and spread a generous amount of mint flavored mayonnaise on it. Then add the vegetable mixture and spread it evenly.
Step 6
Grate some cheese (cheddar or mozerella) and top it off with another tortilla. Place the two tortillas on a greased pan and cook until it's slightly brown on both sides.
