Ingredients
4 servings
1.5 lbsirloin steak
or ribeye, cut into 1-inch cubes
1red onion
cut into 1-inch pieces
2green bell peppers
cut into 1-inch pieces
¼ cupavocado oil
or your favorite cooking oil, start of marinade
1orange
Juice of, no sugar added
2juice of limes
½ cupcilantro
chopped
1jalapeno
seeded and minced
4garlic cloves
minced
1 tspcumin
½ tspsea salt
¼ tspground black pepper
Instructions
Step 1
Place cubed steak in a resealable bag or a glass container.
Step 2
Combine all ingredients for the carne asada marinade in a bowl and whisk together to combine.
Step 3
Pour the marinade over the meat and massage to cover. Marinate in the fridge for 2 hours to overnight.
Step 4
Remove the meat from the fridge 30 minutes before cooking. If using bamboo skewers, soak in water 30 minutes before cooking.
Step 5
Preheat the grill to medium high heat.
Step 6
Remove the steak from the marinade then thread them onto the skewers, alternating with the vegetables. Pour the leftover marinade over the skewers so the vegetable are coated with the marinade.
Step 7
Cook on the grill for 2-3 minutes on each side until the steak is cooked through, about 8-12 minutes total. Rest for 10 minutes, then serve.
