Arayes Kafta (Grilled Kabab in Flatbread)

Arayes are a classic Lebanese style Kafta (Kabab) it’s a fresh spiced beef spread into Pita bread & baked or grilled to perfection. (also made in many other middle eastern countries with different names).
You may serve it with Salad and/ or with tahini dipping sauce, catchup or yogurt.
They are quick, delicious and perfect lunch or dinner.

Instructions
Step 1
Preheat your oven to 200°C, and finely chop the onions, garlic and parsley by hand or with food processor.
Step 2
In a large bowl, mix the ground beef with the onion, garlic and parsley mixture, along with all the spices and 2 tbsp olive oil, mix well using your hands, ensuring all the spices are well incorporated, allow the meat to marinate in the fridge for a minimum 1 hours up to overnight.
Step 3
Cut pita bread in half or quarter (depends on the loaf size) and open it to form pockets, stuff them with about 1.5 to 2 tbsp of the Kafta, ensuring the pita is full but not overfilling it, press them down to flatten and ensure the filling comes all the way to the edge.
Step 4
4- Brush a cast iron grill with oil, then sear the pitas for 1 minute on each side, on medium high heat.
Step 5
Place on the oven rack, on top of the oven tray, so can get more crispy and avoids sogginess and catch the liquid dripping, bake in the oven for about 15 to 20 minutes, until the Kafta is fully cooked, turning them half way through after 10 minutes and keep watching them closely so they don't burn.
Step 6
Serve immediately with some yogurt, tahini sauce or ketchup and some fries. Enjoy.
