Carrot & sesame burgers

Burgers are a family staple, and these sesame-scented ones can be dressed up or down, depending on who likes what in your house.

Instructions

Step 1
Put a third of the grated carrot in a food processor with the chickpeas, onion, tahini, cumin and egg.
Step 2
Whizz to a thick paste, then scrape into a bowl.
Step 3
Heat 1 tablespoon of the oil in your largest frying pan, tip in the remaining carrot, then cook for 8-10 minutes, stirring until soft.
Step 4
Add the cooked carrot to the whizzed paste with the breadcrumbs, lemon zest and sesame seeds.
Step 5
Add seasoning, then mix together.
Step 6
Divide the mixture into six, then using wet hands shape into burgers.
Step 7
Cover and chill until serving.
Step 8
Mix the yogurt with the extra tahini and the lemon juice.
Step 9
Chill.
Step 10
Brush the burgers with the remaining oil.
Step 11
Fry or grill the burgers for 5 minutes on each side, until golden and crisp.
Step 12
When the burgers are ready, serve in toasted buns with some of the lemony sesame yogurt, and some avocado, sliced onion, rocket and chilli sauce, if you like.
