Chicken
500gboneless chicken thighs
500mlbuttermilk
2 tspsmoked paprika
1 tspcumin
1 tspchilli powder
1 tspgarlic powder
1 tspmixed herbs
BBQ Sauce
1 ½ cupsbrown sugar
1 ½ cupsketchup
½ cupapple cider vinegar
½ cupchicken stock
2oranges
squeezed
1 TbspWorcestershire sauce
1 Tbspyellow mustard
2 tspsmoked paprika
1 tsptabasco
½ tspsalt
1 tspblack pepper

Instructions
Step 1
Begin with pouring the buttermilk into a bowl, add the seasonings and mix well.
Step 2
Chop the chicken thighs into bite size pieces and add to the buttermilk. Cover and leave in the fridge for at least 2 hours or overnight.
Step 3
For the BBQ sauce, add all of the ingredients into a cold pan. Mix well and then place on a medium-high heat. Stir well and let it bubble away for 15-20 minutes until it begins to reduce and thicken. Leave to cool.
Step 4
Remove the chicken from the fridge and in a big mixing bowl add the flour, corn flour and seasonings. Drop in the chicken and mix thoroughly making sure all the chicken is evenly coated.
Step 5
Using a deep sauce pan, add 2-3 inces of oil (sunflower, canola etc) and bring up to 180c/350f.
Step 6
Fry the chicken in 2-3 batches in order to not overload the oil. Once the chicken is golden brown and begins to float you know it's cooked. Place onto a drying rack and season with salt.
Step 7
Serve with the BBQ sauce and enjoy!
