Instructions
Step 1
In a small bowl, whisk together Dijon mustard, honey, soy sauce, lemon juice, and put aside.
Step 2
Add oil heavy-bottomed skillet/cast iron/dutch oven and heat over medium heat.
Step 3
While it's heating up, Season the chicken on both sides with salt and pepper.
Step 4
Place chicken skin side down in the skillet, then cover with a lid. Cook chicken for 7 minutes, then flip over, place the top back on and cook for an additional 8-12 minutes or until the internal temperature reaches 165°.
Step 5
Reduce heat to medium-low, add mustard mix. Tangle the sauce to the chicken for about 1 minute.
