Instructions

Step 1
Begin with combining the water and vinegar with the salt and sugar and bring up to a light boil.

Meanwhile slice the peppers.
Step 3
Using a mason jar, add the peppers and pepper corns and pour over the liquid. Seal leave for 1 hour minimum.
Step 4
slice the cabbage in half and finely shred. Save the other half. In a mixing bowl add the cabbage with the green onion seasoning, apple cider vinegar, kewpie mayo and salt & pepper. Mix well and keep adding to your preferred consistency and taste. Cover and leave in the fridge.
Step 5
For the sauce, mince the garlic and chop the parsley. Add to a bowl and mix in with the kewpie mayo and chilli flakes.
Step 6
Take the chicken breast and slice into two even strips.
Step 7
Add the plain flour to a bowl and add the smoked paprika, season with salt and pepper.
Step 8
Crack two eggs into a bowl and whisk.
Step 9
Add the breadcrumbs to a plate.
Step 10
Drop the chicken into the flour, shake off the excess and then into the eggs and then the breadcrumbs. Press down and make sure it's evenly coated.
Step 11
Using a frying pan add roughly 1/2 inch of oil (canola, vegetable etc). Bring it up to temperature (160c/320f) and add the chicken. Fry on both sides until golden brown. Remove and season with salt.
Step 12
Slice open the french baguette and toast.
Step 13
Assemble and enjoy!
