As a southern country girl pinto beans have always made an appearance on the dinner table especially during the winter time. So I took what was familiar and added on my own twist. If spicy is not your thing have no fear you can remove the peppers.

Instructions
Step 1
Soak beans overnight in cold water. (This is an important step please don't skip)
Step 2
Combine the beans, water, onion, garlic, fat back and jalapeno in a pot.
Step 3
Bring to a boil, reduce heat, and simmer, covered, about 1 hour.
Step 4
Check the pot from time to time and add more water, if needed, to keep the beans covered.
Step 5
Add the lard (or other fat) and salt. Continue to simmer until the beans are tender. Do not let the beans go dry. There should always be some broth. Add hot water if necessary
Step 6
Once complete and plated garnish with a jalapeno slice.
