1sweet potato
grated
1 packtempeh
cut into small pieces
1can black beans
whole & drained/rinsed
3 Tbsplow-sodium soy sauce

Instructions
Step 1
1. Before you begin, pickle the red onions! Thinly slice red onion & place in mason jar. In bowl, whisk together ACV, sugar, and salt until sugar & salt mostly dissolve. Whisk in 1/2 cup water. Pour over onions & let sit for ~1 hour.

2. In a small mixing bowl or measuring cup, whisk together the sauce ingredients. Set aside.

3. With a grater, shred the sweet potato until you have ~2 cups. Set aside.

4. Heat oil in a large nonstick skillet over medium heat. Cook tempeh, continuing to break it up for 2 minutes until golden. Fold in sweet potato. Stir in soy sauce. Cook until sweet potato begins to soften (roughly 4 min). Add black beans.
Step 5
5. Add "sauce" to mix. Let cook until sauce has thickened (roughly 3 min).
Step 6
6. Meanwhile, make the chipotle crema sauce. Whisk/mix together greek yogurt, lime juice, and adobo sauce until you like the taste/consistency.
Step 7
7. Build your bowl! Top a bed of brown rice with the sweet potato mixture (and chicken, optional), and add avocado, lettuce, tomato/pico, pickled red onion, cotija cheese & plenty of chipotle crema :) Top with cilantro if you have it!
