For the Dressing
0.5 blocksilken tofu
2 tablespoongochujang
2 tablespoonsmirin
¼ cuprice vinegar
2juice of limes
1 tablespoonsesame oil
salt

For the Dressing:
Step 1
-Place all ingredients in a small blender and blend until completely smooth. Store in fridge for up to two weeks. If the dressing is a bit thick, adjust with more vinegar or some water.
Assembling the Salad:
Step 2
-Cook the noodles as directed, thens strain and rinse them well under cold water. Allow to drain for a few minutes then toss with a generous amount of the dressing.
-Place the noddles in a large bowl and neatly arrange the match stick veggies around them. sprinkle with the cilantro and crushed peanuts, then drizzle with plenty more dressing before serving.
