Step 1
Drain your chickpeas and pat them dry. Mix them into a small bowl with 1 tsp olive oil and throw them in the air fryer at 425° for 10 minutes
Step 2
Cut your cabbage into small thin pieces. In a medium bowl, add in your cauliflower florets and cabbage. Massage in 1 tsp olive oil and salt and pepper.
Step 3
Once the chickpeas have cooked for 10 minutes, add the cabbage and cauliflower into the air fryer and cook for 15 more minutes
Step 4
Meanwhile, slice 1/8 of a red onion into thin pieces. Add it to a hot, oiled pan and sauté for 5-10 minutes on low heat.
Step 5
Once soft, move to your serving bowl. Crack the egg onto the pan and either scramble or fry it - chefs choice
Step 6
Assemble bowl: add your cooked cabbage, crispy chickpeas, roasted cauliflower, sautéed onions, and egg into a bowl. Serve with guacamole, a cilantro sauce or dressing, and sesame seeds
