Instructions
Step 1
Drain excess water from tofu using by wrapping it in a clean towel and placing a heavy object on top (like a skillet).
Step 2
While tofu is draining, mix the spices with the liquid aminos to create a sauce.
Step 3
Cut veggies and set them aside. Put a pan on the stove and set it to medium heat. Once the pan is hot, add olive oil and shortly after add the veggies. Cook them until tender (about 5 minutes).
Step 4
Unwrap the tofu and use a fork to crumble into scrambled egg size pieces.
Step 5
Use a spatula to move the veggies around in the pan and add the tofu pieces. Sauté for 2 minutes, then add the sauce in an even layer across the tofu and veggies. Cook for around 5 additional minutes until the tofu becomes a slightly brown in color. Add chopped cilantro.
Step 6
Wrap in a tortilla or serve with roasted potatoes and veggie sausage. You can always add lime, hot sauce, or salsa for more flavor. This can be reheated on the stove or in the microwave.
