Instructions

Step 1
Dice the chicken breast into small pieces and start to cook them in a pan alongside the chopped garlic and chilli
Step 2
Once they start to brown add the coconut milk and curry paste and simmer on a low heat for 15 minutes
Step 3
Once the chicken is fully cooked and the sauce is simmering, add the pak choi or veg of choice
Step 4
Whilst this is cooking, fill a bowl with boiling water and add the udon noodles for 30 seconds to soften
Step 5
Once they have softened add the noodles to the pan with the chicken curry
Step 6
Serve and enjoy
