Step 1
Cream sugar, oil, zucchini, eggs, and vanilla. Stir remaining dry ingredients together. Add dry ingredients to wet. Stir until just mixed and pour two greased and floured loaf pans. Bake at 325°for one hour. For muffins, bake at 350° for 18-20 minutes.
