2 large pita breads
1 tsp sumac
1 tsp salt
1 tbs olive oil
1 head romaine lettuce sliced
1 cup diced bell pepper
1 cup diced cucumber
1 cup diced radish
1 cup diced tomato
1 cup red onion diced
1 cook diced beet(optional)
1 bunch chopped parsley
1 bunch chopped mint
For the dressing
1/4 cup lemon juice
1 tablespoon sumac
2 cloves crushed garlic
1/2 cup olive oil
1 teaspoon salt
1/4 teaspoon pepper
Cut pita bread into cubes and place onto a foil lined sheet pan. Season with 1 tsp salt 1 tsp sumac and 1 tbs olive oil and toss well. Bake at 400° 8-10 minutes until crisp and set aside. In a large bowl combine lettuce, bell pepper, cucumber, radish, onion, tomato, mint and parsley. Place toasted pita bread on top set the salad aside and for the dressing combine crushed garlic, olive oil, lemon juice, salt, pepper and sumac. Top the salad with the dressing right before serving give it a good toss and enjoy.
