Ingredients

1 ½ cupbanana
mashed, ripe
1egg
½ cupplant milk
use unsweetened to keep recipe refined sugar free
1 Tbspapple cider vinegar
1 ½ tspground cinnamon
2 tspvanilla extract
1 ½ cupsgluten-free flour
1 to
2 tspbaking soda
¼ tspsalt
⅓ cupdates
chopped, deglet, or medjool dates work
½ cupsemi-sweet chocolate chips
½ cupwalnuts
Instructions
Step 1
Heat oven to 350, and prepare a standard bread pan by lining with parchment paper or lightly greasing the pan.
Step 2
Combine plant milk and apple cider vinegar in a medium sized bowl and let sit for a few minutes.
Step 3
Meanwhile, fork mash your bananas until they're thoroughly mashed, with only a few chunks for texture, if desired
Step 4
Add mashed banana, egg, and vanilla to the milk/vinegar mixture, and use a whisk or fork to combine thoroughly.
Step 5
In a separate large bowl, combine the flours, baking soda, cinnamon, and salt. I recommend sifting for the best outcome but it isn't necessary.
Step 6
Fold the wet ingredients into the dry until just combined, don’t overmix.
Step 7
Fold in the chopped dates, and nuts/chocolate chips if using.
Step 8
Pour batter into prepared pan and top with more chocolate chips, if using/desired.
Step 9
Bake for 42-45 min until the top is lightly browned and a toothpick comes out clean.
Step 10
Allow to cool at least 15-20 minutes before cutting.
