Instructions

Step 1
In a large bowl, sift the flour baking powder and bicarb of soda
Step 2
Add in the coconut, sugar and salt.
Step 3
Mix it all together and form a well in the middle
Step 4
Add the oil, milk, eggs, banana puree, and vanilla extract and whisk it all together.
Step 5
Pour into a well oiled bread pan and bake for 35 minutes at 170C fan forced or till a skewer comes out clean when tested
Step 6
Remove from oven and let it cool down for 10 minutes
