Instructions

Step 1
Preheat the oven to 170°C. Grease and line a 900g loaf tin with baking parchment.
Step 2
Melt the butter in a medium saucepan, take off the heat and stir in the sugar, then set aside to cool while you measure the dry ingredients into a large bowl.
Step 3
In a separate large bowl, mash the bananas.
Step 4
Once cooled, use a balloon whisk to whisk the eggs one at a time into the pan with the butter and sugar.
Step 5
Whisk the mashed bananas into the pan.
Step 6
Whisk the buttermilk into the pan.
Step 7
Finally, gently mix in the dry ingredients (don't overmix).
Step 8
Tip half the mixture into the tin and scatter over two-thirds of the chocolate drops.
Step 9
Layer over the remaining cake mixture and top with the rest of the chocolate.
Step 10
Bake for 60-75 minutes, or until a skewer inserted into the center comes out clean. Cool in the tin for 15 minutes, then transfer to a wire rack to cool completely. Slice to serve.
