Step 1
Rub pork tenderloin with 1 tbsp mustard, salt, and pepper. Heat a skillet on high, add pork and brown on all sides. Tranfer pan to oven and roast for 10-15 until pork registers 145 degrees.
Step 2
Place the same skillet over high heat and add vinegar. Bring to a boil and scrape up any brown bits.
Step 3
Whisk in maple syrup and remaining mustard, cook until slightly thickened. Then add fresh sage.
