Instructions
Step 1
Place oats, non-dairy milk, bananas and vanilla in a blender and blend until smooth.
Step 2
If desired, mix in blueberries, raisins or nuts.
Step 3
Lightly wipe or spray a non-stick skillet with a small amount of olive oil and heat over medium heat. Pour or scoop batter onto skillet using about 1/4 cup per pancake. Cook until edges are golden, about 2 minutes, flip and cook for another 1-2 minutes.
Step 4
Serve with toppings if desired.
Step 5
Recipe makes about 6 medium-sized pancakes.
