Instructions
Step 1
Heat olive oil in a pan over high heat and add mushrooms. Heat for 5 minutes and then add the spinach for a further 2 minutes or until leaves are wilted and mushrooms and browned.



Step 2
Meanwhile, whisk together the egg, milk, curry powder and cheese. Add to a hot pan and scramble.




Step 3
Serve scrambled eggs on toasted bread alongside mushrooms and spinach.
