Green Banana Pancake

A traditional Norfolk Island breakfast (or pudding!) A very delicious way to eat green bananas/plaintains or indeed unripe yellow bananas if these are easier to find in the supermarket.
Swap the butter for 3 tablespoons olive or rapeseed oil for a boost in monounsaturated fats. This recipe was tested, tweaked and photographed by Jackie Wilson - Registered dietitian.

Instructions
Step 1
Peel 6 bananas. Grate and mix well with pepper and salt.
Step 2
Gather a handful of the grated banana and shape into a round pattie/pancake with your clean hands.
Step 3
You will need to cook the mixture in 2-3 batches depending on the size of your frying pan.
Step 4
Heat up the butter or oil and cook for 5 minutes on both sides until pale brown or crispy. Be careful with the butter that it does not burn!
