Instructions
Shrimp Toast
Step 1
Cut off the crust of the slices of bread and cut each slice into 4 even squares.

Step 2
Finely mince the shrimp and add it to a large bowl along with potato starch, egg white, chicken powder, lard, sesame oil, scallions, lemon zest, salt, and black pepper.









Step 3
Fry off a small amount of the shrimp mixture in a pan to taste for seasoning.
Step 4
Place a large dollop of the shrimp mixture onto half of the bread slices, sandwiching with the other half of the bread slices.
Step 5
Heat the oil to 175 C (350 F) and fry each sandwich until they turn golden brown on both sides.

In a bowl, mix together the oyster sauce, ketchup, rice vinegar, minced garlic, sugar, and yuzu kosho.
