Gluten-Free (flourless) Pancakes

I just made this recipe the other night when I was craving something sweet and something "bready". Since it was just me I only made a very small batch of pancakes, which is what the recipe shows (3 pancakes), but feel free to make a much larger batch and enjoy! Definitely curbed my cravings!

Step 1
Whisk together all ingredients except for the raspberries until combined.
Step 2
Cook on griddle as you would normal pancakes, or in oven on parchment lined baking sheet at 350 degrees for 10 minutes
Step 3
Top with topping of your choice. I chose raspberries!
